Simple Enoki Mushroom Soup

You can make this tasty soup in no time!

Ingredients: 2 servings

Enoki mushrooms
50 g
Soup stock cube
400 ml
Soy sauce
1/2 teaspoon
1 teaspoon
Green onion (thinly sliced)
a small amount
Coarsely ground black pepper
to taste


1. Slice the stems off the mushrooms, and slice into 3 cm lengths.
2. Heat the 400 ml of water and soup stock in a saucepan. Stir with a ladle, and add the mushrooms when the soup stock has dissolved.
3. Once boiled, remove from the heat and mix in the soy sauce and butter.
4. Pour it into bowls, sprinkle on some green onion, and season with black pepper to finish.

Story Behind this Recipe

I came up with this as a tasty way to enjoy leftover enoki from when I made a hot pot. Mushrooms and butter go together very well, so I used this combination.
