Korean Braised Atsuage

Korean Braised Atsuage

I tried my hand at a simple way of preparing a quintessentially Korean dish, "dubu jorim," or braised tofu in sauce using atsuage deep fried tofu.

Ingredients: 3 to 4 servings

2 blocks
1 clove
Chopped Japanese leek
2 tablespoons
3 tablespoons
Soy sauce
4 tablespoons
1/3 tablespoon
Sesame oil
1 tablespoon
Red chili pepper powder
1 teaspoon
Roasted sesame seeds
1 teaspoon

1. Cut the atsuage into quarters.
2. Mix all the rest of the ingredients together to make the sauce.
3. Put the atsuage and the Step 2 sauce in a frying pan, and simmer.
4. When there's almost no liquid left in the pan, it's done.

Story Behind this Recipe

In South Korea this dish is made by pan frying and simmering firm tofu, but Japanese firm tofu is softer and has more water. So if you use atsuage instead, you can make this easily.
