Remove the fish heads. With the tip of a knife, press down on the guts sticking out and pull the fish body to the left.
Cut the fish into 4 equal pieces and wash away the blood.
Julienne the ginger.
Bring the ☆ ingredients to a boil in a pressure cooker, and add the ginger and fish.
Cover with a lid and cook over strong heat. Turn down the heat to low when it starts to steam and cook for 15 minutes.
Stop the heat and leave until the pressure drops.
Remove the lid and simmer until the broth reduces. Then it's done.
Story Behind this Recipe
I was fed up with salt-grilled saury, so I made this. The preparation is easy and it doesn't take long in the pressure cooker, so I always make this when saury is cheap.
Pull the guts out slowly. It should come out easily. You can cook up to 4 fish with the amount of ingredients listed. Simmering after the pressure drops will give a rich finish. The fish will become shiny and looks delicious.
