Shio-Kombu & Atsuage Tofu Stir-Fry

This side dish may be a simple and effortless, but it's delicious!

Ingredients: 4 servings

15 g
Atsuage (silken)
2 blocks
Green onions (finely sliced)
a handful
Grated ginger
1 teaspoon
1 teaspoon
Sesame oil
2 teaspoons


1. Roughly dice the carrot.
2. Stir-fry the carrot in a saucepan with some sesame oil over medium heat for 1-2 minutes.
3. Rip the atsuage into small pieces (smaller than bite-sized) and add to the pan from Step 2. Stir-fry for 1 minute.
4. Lastly, add the shio-kombu, green onions, grated ginger, and mirin, and briskly toss to complete.

Story Behind this Recipe

I came up with this thinking how the strong, rich, savoury flavour of shio-kombu and would go well with plain atsuage.
