Burdock Root, Konnyaku and Beef Simmered with Miso

Burdock Root, Konnyaku and Beef Simmered with Miso

This is great for dinner, and it's perfect in bentos too!

Ingredients: 2 servings

Beef (thinly sliced)
100 g
Burdock root
1 block
100 ml
2 tablespoons
2 tablespoons
Sesame oil (for stir frying)
1 tablespoon

1. I peeled the burdock root with a vegetable peeler rather than a knife! Soak the peeled pieces in water. You can add a teaspoon of vinegar to the water too!
2. Break up the konnyaku block with a spoon, and blanch in boiling water to get rid of the odor. Combine the ● ingredients with just 20 ml of sake to dilute.
3. Stir fry the drained burdock root in sesame oil until browned, then add the konnyaku. When the konnyaku is cooked through, add the beef.
4. When everything is cooked through, add the remaining 80 ml of sake and simmer over low heat.
5. Add the ● combined with sake from step 2. Rinse the bowl that the ● were mixed in with 2 tablespoons of water, and add that to the pan too. Simmer over low heat.
6. Continue simmering until most of the liquid in the pan has evaporated, and serve!
