Octopus and Cucumber with Wakame Seaweed in Vinegar

Vinegar is good for you. It'll also help beat summer fatigue as well.

Ingredients: 2 servings

Boiled octopus
Dried wakame seaweed
1 tablespoon
Shirasuboshi (dried baby sardines)
1 tablespoon
Grated ginger
to taste
to taste
☆ Vinegar
1 1/2 tablespoons
☆ Sugar
1 tablespoon
☆ Soy sauce
1/3 tablespoon


1. Slice cucumbers thinly and sprinkle salt. Let rest. Soak the wakame in water to rehydrate.
2. Cut the octopus into bite-sized pieces. Put ☆ ingredients in a bowl and mix.
3. Wash the salt off the cucumber and squeeze excess water. Drain the wakame and chop if necessary.
4. Combine octopus, cucumber, wakame and dried baby sardines in a bowl, add the ☆ ingredients and mix.
5. Transfer to a serving plates and top it with grated ginger to finish.
