Beef and Burdock Root with Eggs

Beef goes perfectly well with burdock root. This combination whets my appetite.

Ingredients: 4 servings

Burdock root

Thinly sliced beef
200 g
Eggs
2
Green onions or scallions

Vegetable oil
1 tablespoon
Sauce
Soy sauce
2 tablespoons
Mirin
2 tablespoons
Sake
2 tablespoons
Sugar
2 tablespoons
Dashi soy sauce
2 tablespoons
Water
50 ml

Steps

1. Cut the burdock root into long thin shavings. Cut the beef into bite-size pieces. Combine the sauce ingredients.
2. Heat vegetable oil in a pan, add burdock root, and stir-fry until softened.
3. Add the beef, and continue stir-frying. When the colour of the meat starts to change, pour in the sauce mixture. Cover with a lid, and simmer for about 5 minutes.
4. Pour in the beaten eggs, and stir quickly with chopsticks. Cover with a lid, and simmer for another minute.
5. Garnish with thinly sliced green onions, and it's done.

My mother used to cook this dish for me. I made this with burdock roots from my father's garden.
