Goat Cheese Salad

This slightly fashionable salad is a current fad in my home.

Ingredients: 2 servings

Corn salad (Lamb's lettuce or CanĂ³nigos)
as needed (I use 30-50g)
as needed (I use about 3-4 Spanish walnuts)
as needed
Goat cheese
as needed (1cm pieces)
to taste
Olive oil
to taste


1. Wash the corn salad leaves. Remove the walnuts from their shells.
2. Crush the walnuts into small pieces. (You can use your hands, a knife, or a mortar.) Chop up the raisins if they are large.
3. Place the corn salad leaves, walnuts, and raisins (in that order) into a salad bowl. Top with the chopped goat cheese.
4. Lightly season with salt, drizzle with olive oil, and enjoy.
5. This is the goat cheese I used.

Story Behind this Recipe

I had this salad at a dinner party hosted by my friend. That salad was topped with grated cheese, but I felt that it was unnecessary so I left it out of my recipe. I used finely cut goat cheese as a topping instead.
