I was so shocked because this recipe really takes the bitterness out of bitter melons. This salad is absolutely delicious.
My mother-in-law grows her own bitter melons, and she taught me this recipe. I gobbled it all up since it's not bitter at all. It's great for kids, too!
The key is to remove the pith thoroughly, and to slice the bitter melon pretty thin.
