Banana Cake No. 2

A simple cake with a moist texture.

Ingredients: 20 cm pound cake pan or similar

Soft light brown sugar
100 g
Banana (well-ripened)
1 tablespoon
Vegetable oil
100 ml
Cake flour
150 g
Baking powder
1 teaspoon


1. Combine and sift the flour and baking powder. Mash the banana with a fork, and mix in the rum.
2. Break the egg into a bowl, add the sugar and mix well with a whisk. Mix in the banana and add the vegetable oil a little at a time.
3. Add the powdery ingredients, and mix until there are no lumps and the batter is smooth and even.
4. Pour into the tin and bake for 40 minutes at 180℃ on the lower rack of the oven. Cover it with foil if it looks like it's going to burn. Pierce it with a skewer to check if it's done.

Story Behind this Recipe

When I was a child, my mother often made carrots and other kinds of cake with vegetable oil. I remembered that, and made this cake.
