Mix the bread flour and cake flour in a bowl. Add the salt, sugar, and yeast without letting them touch .
Combine the warm water and olive oil, and set aside.
Add the Step 2 mixture to Step 1, and mix with a spatula.
Knead with your hands until the flour on the sides of the bowls comes off cleanly.
Divide the dough in half, and mix one dough with the black sesame seeds, and the other with the grated cheese.
Cover with a tightly wrung out kitchen towel, and let rise for 30 ~ 40 minutes. You can use your oven's bread-rising function.
When the rising has finished, press down with your palm to get the air out. Divide the dough into 8 ~ 10 portions.
Roll out 8 ~ 10 portions of dough into the length of a baking sheet, and arrange them on the baking sheet.
Bake in the preheated oven for 20 ~ 25 minutes at 200℃.
Do the same with the cheese dough.
Let cool on a rack to prevent condensation from making them soggy.
Story Behind this Recipe
I love grissini, but they don't have them at my local store often, so I made them myself.
Adjust the thickness and length of the grissini however you like, but if you make them thicker, make sure bake them for longer. You can decrease the amount of sesame seeds and cheese, but if you increase them, it will be hard to blend into the dough.
