Basic Madeleines

This is the recipe I've been using since I was a kid.

Ingredients: 12 Madeleines

Eggs
2
Flour
100 g
Sugar
90 g
Baking powder
1/2 teaspoon
Unsalted butter
100 g
Vanilla extract
a small amount

Steps

1. Sift together the flour, sugar and baking powder into a bowl. Add the eggs and combine (do not whip).
2. Melt the butter in a pot, taking care not to burn it.
3. Add the melted butter to the batter and combine with a wooden spatula. Add vanilla extract.
4. Coat the madeleine pan with vegetable oil or butter and pour in the batter. Bake at 180℃ for 10~12 minutes.
5. Remove the madeleines from the pan when they are still warm and place in a plastic bag. This will make them nice and moist.
