Redcurrant Salad

This salad is brightened by the precious redcurrants from my garden. Their sour taste and crunchy texture makes them the perfect addition to a salad!

Ingredients: 4 servings

half a head
a handful
Salt and pepper
to taste
Olive oil
a swirl
Citrus vinegar (lemon etc.)
as needed
Salt (for the turnip)
as needed


1. Thinly slice the turnip, and lightly sprinkle it with salt.
2. Cut the lettuce and cucumber into bite-sized pieces.
3. Squeeze the moisture out of the wilted turnip, and combine it with the lettuce and cucumber. Mix in the dressing ingredients.
4. Transfer to a serving bowl and top with the redcurrants.
5. It will have a crispy texture if you eat it straight away. If you leave it overnight, it will be like a marinade.
