Eggplants in Nanban Style Stir-fry

Do you have leftover eggplants to use up? Season them with a sweet-tart sauce.

Ingredients: 2 servings

Eggplant (slim Japanese type)
3 medium
Sesame oil
1 tablespoon
○ Mentsuyu
1 tablespoon
○ Sugar
1 tablespoon
○ Vinegar
1 tablespoon
○ Mirin
1 tablespoon
○ Sake
1 tablespoon
○ Water
1 tablespoon
Chopped green onion, toasted white sesame seeds
To taste


1. For basic instructions on how to prepare the eggplants, see Recipe ID: 1520318.
2. Slice the eggplants about 1 cm thick. You don't need to soak them in water since they'll be stir fried right away! Mix the ○ ingredients.
3. Stir fry the eggplant in a frying pan with sesame oil.
4. Brown the eggplant.
5. Add the combined ○ ingredients and simmer down. Be careful not to burn yourself!
6. When the ○ has thickened, transfer to a serving dish.
7. Sprinkle on some chopped green onion and white sesame seeds to taste! You could also chill the dish before serving.
