Oregano Greek Lemon Potatoes

This is an addictive umami dish combining garlic, lemon, and chicken ✽ It's great as a drinking snack and delicious even when cold.

Ingredients: 2 servings

2 medium
Lemon juice
2 tablespoons
Olive oil
1 tablespoon
Grated garlic
1 clove
Chicken soup stock granules
1/2 teaspoon
1/2 teaspoon
to taste
1/2 teaspoon


1. Combine the seasoning ingredients in a large bowl. It's enough to perhaps add another potato to season.
2. Cut the potatoes lengthwise into fours (if not using spring potatoes, peel the potatoes), then poke many holes into the potatoes with a fork to let the flavors soak in. This is key!
3. Arrange the cut potatoes in a heatproof dish, wrap with plastic, and microwave for about 5 minutes until it's tender enough to be poked with a skewer easily.
4. Put the heated potatoes into Step 1 and for at least 10 minutes, stirring occasionally. Preheat the oven to 180℃.
5. Line a baking sheet with foil and arrange the potatoes on top. Top with the remaining marinade. Bake for about 15 minutes, flipping the potatoes midway to coat.
6. Finally, coat the potatoes with the marinade on top of the foil, transfer to a grill, and grill over low heat for 2-3 minutes until browned to finish.
