Bill's Ricotta Cheese Pancakes!

I made a variation on Bill Granger's recipe for fluffy ricotta pancakes!

Ingredients: 2 servings / 6 pancakes

Ricotta cheese
130 g
80 g
Egg (separate the yolks and whites)
90 ml
Baking powder
1/2 teaspoon
a small amount
to taste
Honeycomb butter
2 tablespoons
2 tablespoons


1. For the honeycomb butter, bring the butter and honey to room temperature and mix together.
2. Put the ricotta cheese, milk, and egg yolks into a bowl and gently mix together.
3. Sift the flour, baking powder, and salt into the mixture from Step 2 and mix until just combined.
4. In a separate bowl, mix the egg whites until peaks form.
5. Fold in the egg whites in two goes into the mixture from Step 3.
6. Melt the butter in a heated frying pan and spoon the batter into it. Cook over a medium-low for about 2 minutes. When fragrant and cooked, flip over and cook the other side as well.
