For the honeycomb butter, bring the butter and honey to room temperature and mix together.
Put the ricotta cheese, milk, and egg yolks into a bowl and gently mix together.
Sift the flour, baking powder, and salt into the mixture from Step 2 and mix until just combined.
In a separate bowl, mix the egg whites until peaks form.
Fold in the egg whites in two goes into the mixture from Step 3.
Melt the butter in a heated frying pan and spoon the batter into it. Cook over a medium-low for about 2 minutes. When fragrant and cooked, flip over and cook the other side as well.

I got Bill Granger's recipe and made my own version that is easy to make at home. It's even fluffier and more mouth-watering than the real deal!
This is the result of much trial and error. This is the most delicious and easiest version. It's maintains a nice cheesy texture. The pancakes themselves aren't that sweet, but if you use the honeycomb butter and powdered sugar, they will become sweet enough. If you have a sweet tooth, you can also use maple syrup!
