Crispy Basic Cookie Cutter Cookies

These are basic cookie cutter cookies that are crisp and light on your tongue.


100 g
60 g
Egg yolk
Cake flour
170 g


1. Bring the butter to room temperature, and cream with a whisk.
2. Add sugar and mix.
3. Add the egg yolk, and mix until the mixture becomes smooth.
4. Finally, add cake flour, and fold in.
5. Roll into a ball, cover with plastic wrap, and let it sit in the fridge for about 1 hour.
6. Roll out the dough to 5 mm thickness, and cut out shapes. Bake in the oven for about 20 minutes at 170℃/340℉.
7. I usually let them cool on newspaper. It absorbs the oil well. Let cool completely, and they're done.
