Chicken Gyoza with Shiso & Shio-Koji

These are some light-tasting gyoza filled with minced chicken, shiso and shio-koji.


Chicken mince (either thigh or breast meat)
250 g
130 g
Shiso leaves
10 leaves
Ginger (finely chopped)
1 large knob
1 tablespoon
Soy sauce
scant 1 tablespoon
Shio-koji or salt
1 tablespoon or 1 scant teaspoon
Gyoza skins
Sesame oil
to taste

1. Finely chop the cabbage and draw out the moisture by sprinkling some salt over it. Then finely chop the shiso and ginger as well.
2. Add the ingredients from Step 1 and the chicken mince into a bowl and mix them together well with the sake, soy sauce, and shio-koji.
