Fluffy Basic Sponge Cake

This recipe does not use butter but the cornstarch makes a fluffy sponge cake. Decorate it as you'd like.

Ingredients: 18 cm cake pan

Cake flour
65 g
Cornstarch
25 g
Sugar
70 g
Eggs
3 large

Steps

1. Put the eggs and sugar in a bowl, and beat over a double boiler. When the sugar dissolves, whip about 15 minutes with a hand mixer.
2. Sift the cake flour and cornstarch together, and add to the mixture in Step 1. Fold in lightly with a rubber spatula.
3. Pour the step 2 batter into a cake pan lined with parchment paper. Bake for 35 to 40 minutes in an oven preheated to 170°C. And then it's done!
