Herring Salad with Beetroot

Herring Salad with Beetroot

You will enjoy the beautiful pink colour of this salad. This is a Russian speciality. Great for parties.

Ingredients: 4 servings

Beetroot
1
Potatoes
3
Eggs
3
Pickled herrings in vinegar
3 fillets
Dill
as needed
Pickled cucumbers
3
Mayonnaise
3 tablespoons
Sour cream
2 tablespoons
Salt and pepper
a small amount

Steps

1. Cook the beetroot and potaotes without peeling until tender. Boil the eggs.
2. Chop the cooked beetroot, potatoes, eggs, pickled cucumbers and pickled herrings separately.
3. Mix the ingredients except the herrings with the mayonnaise and sour cream. Salt and pepper to your taste. Put the mixture and herrings into a small bowl.
4. Cover the bowl with cling film and chill in the fridge for 2 to 3 hours. When the mixture is set, turn the bowl over onto a serving dish. Remove the bowl and garnish with dill.

Story Behind this Recipe

This is a Russian and Ukrainian speciality. When I stayed in Russia, I loved this salad and I often ate it. I happened to get beetroot, so I decided to have this for the first time in a while.
