Zucchini and Ground Pork Stir-Fry with Curry and Soy Sauce Seasoning

If you don't like zucchini, try this curry- and soy-sauce-flavored zucchini. You may find you like it.

Ingredients: 2 servings

Zucchini
1
Ground pork
80g
Soy sauce
1 tablespoon
Curry powder
less than 1 teaspoon
Vegetable oil
as needed

Steps

1. Wash the zucchini and slice into 6-7mm thickness.
2. Put the sliced zucchini in the heat-proof dish and microwave for 1 minute at 700W (You can skip this step if you prefer a crunchy texture.)
3. Heat vegetable oil in a pan and stir-fry the ground pork until golden brown.
4. Add the zucchini to the pan and stir-fry. Add the soy sauce and curry powder and continue stir-frying.
5. Serve on a plate and enjoy.

Story Behind this Recipe

I like zucchini, but my child doesn't. I suspected he may eat if it's seasoned with curry, so I gave it a shot. Both he and my husband liked this, so I posted the recipe here.
