Miso Soup with Sweet Onion and Aburaage

Onion gives a subtle sweet flavour to this miso soup. Add other vegetables to your taste.

Ingredients: 2 servings

1 medium
Aburaage (use 2 if you use sushiage)
1 tablespoon
2 tablespoons
*Dashi stock powder
2 teaspoons
600 ml
2 tablespoons or more
Chopped green onion (optional)
as needed


1. Slice the onion into 5 mm slices. Pour boiling water over the aburaage to remove the excess oil and slice into 1 mm slices. Chop the green onion if you have it.
2. Put the* ingredients into a sauce pan and bring to a boil. Use only 1 teaspoon of dashi stock powder at this point.
3. After bringing to a boil, add the onion.
4. Cover loosely with a lid and steam-cook for about 4 and 1/2 minutes (over a medium-high heat).
5. Add the aburaage and cook for a little while longer. Turn off the heat.
6. Add the miso and dissolve.
7. Add the rest of the dashi stock powder and reheat over medium-high heat.
8. When the edges of the pan start to bubble, it is time to serve.
9. Transfer the miso soup into dishes and sprinkle with chopped green onion.

Story Behind this Recipe

My grandmother used to make this miso soup with sweet onion and aburaage. She used to put eggs in this miso soup. I changed my grandmother's seasoning to my taste.
