Rinse the potatoes thoroughly and cut into 8 equally sized wedges. Soak the potatoes in water and then pat dry with kitchen towels.
Fry the potatoes in oil at 160-170℃, turning the heat up to high at the end. Then, drain the oil and sprinkle with salt while they're still hot.

You can dust these potato wedges with flour before frying if you'd like. They also taste delicious when sprinkled with fried chicken seasoning. Check to see if these wedges are done by inserting a skewer. If they're soft then they're ready. Feel free to sprinkle on some black pepper or herb salt too.
