Pickled Cucumbers (Quick-Prep Microwave Version)

Quick prep with a microwave! Actual prep time is less than 10 minutes. For the slow-cooking version of homemade pickled cucumbers, see (Recipe ID: 1166676).


Ginger (julienne)
10 g
● Soy sauce
60 ml
● Sugar
40 g
● Vinegar
15 ml


1. Slice cucumber into 5 mm thickness, sprinkle with salt (not included in ingredients) and let sit for 30 minutes.
2. After 30 minutes, put the ● ingredients in a heat-proof dish and microwave for 2 minutes.
3. Drain the excess water and add ginger to Step 2.
4. Mix lightly from time to time.
5. It will be done in 2 to 3 hours (It's almost done at this stage, but it becomes more thoroughly pickled with time).
6. Chill in the refrigerator after pickling.
7. Don't throw away the remaining liquid! You can use it for the next time you make this. Since it will be watered down, add seasoning to boost the flavor.

Story Behind this Recipe

Since I wanted to make pickled cucumbers quickly, I tried using the microwave... and it worked!
