Fluffy Cake-Like Manju with Rice Flour

Fluffy Cake-Like Manju with Rice Flour

This is a recipe for a fluffy cake-like manju (sweet dumplings) which all you need to do is to mix and steam. It does not contain any oil or eggs, and can be an allergy-friendly snack.

Ingredients: Makes 5-6 muffines that are 4-5 cm

Rice flour
100 g
Matcha (or aojiru)
6 g
a pinch
Raw cane sugar
30 g
Baking powder
3 g
Milk (or water)
130 g
as needed

1. Prepare the steamer and boil the water, so that once the batter is ready, it can be steamed right away.
2. In a bowl, add all the ingredients except milk and anko and stir it with a whisk. Add the milk and mix well until all of the flour has been incorporated.
3. Pour the butter in a cup up to about half full.
4. Press in the desirable amount of anko into the batter.
5. Pour in the rest of the batter to cover the anko. Steam the batter over high heat for 15 minutes. Insert a bamboo skewer into the batter and if no sticky batter comes out, it is done.

Story Behind this Recipe

Making manju is very hard for me, so I made easy manju-style snacks.
