Refreshing Simmered Pork, Daikon Radish, and Carrot

Refreshing Simmered Pork, Daikon Radish, and Carrot

Just adding vinegar to my usual recipe for simmered pork, daikon, and carrot made it more refreshing for summer. The vinegar also helps prevent it from spoiling.

Ingredients: 4 servings

Thinly sliced pork belly (or pork offcuts)
200 g
Daikon radish
★ Soy sauce
3 tablespoons
★ Sake
2 tablespoons
★ Mirin
2 tablespoons
★ Sugar
1-2 tablespoons
1-2 tablespoons
Hot water
400 ml
Sesame oil
1 tablespoon

1. Peel the daikon radish. Cut it in half vertically and then cut it into chunks. Peel the carrot and cut it into chunks. Parboil the daikon radish in the microwave.
2. Cut the pork into 3 cm pieces. Pour the sesame oil to a deep frying pan and stir-fry the pork. Add the daikon radish and carrots and stir-fry. Add the hot water and the ★ ingredients.
3. Simmer over low-medium heat for 20-30 minutes until the liquid completely boils away (and the vegetables are soft). Add the vinegar just before it is done simmering.
