Bitter Melon and Tuna Salad

Bitter Melon and Tuna Salad

I'm not so keen on bitter melon or raw onion, but I LOVE this! It's my mother-in-law's recipe.

Bitter melon
1/2 (120 - 150 g)
1/4 of a medium one
Canned tuna (small)
1 can
1 tablespoon
Salt and pepper
a small amount

1. Halve the bitter melon vertically and remove the seeds. Slice 2-3mm thick. Sprinkle salt (not listed).
2. Slice the onion and soak in salt water. Drain the oil from the tuna can.
3. Leave the bitter melon to rest until moisture seeps out of it and rinse off the salt. If the bitter is still too bitter, soak it in water for a while longer.
4. Drain the ingredients well, add the mayonnaise and season with salt and pepper.

Story Behind this Recipe

When I visit my husband's family in summer, his mother makes a lot of this and puts it in the fridge. I love it.
