Sweet Maple Bread

Sweet Maple Bread

I made a fluffy and sweet bread by using maple jam (or maple syrup) instead of sugar.

Ingredients: 6 rolls

Bread (strong) flour
160 g
Dry yeast
1 teaspoon
Maple jam
60 g
(if using maple syrup)
3 tablespoons
1/3 teaspoon
20 g
65-70 ml

1. Add all of the ingredients to a bread maker and leave it to run until the first proving. You can also knead the dough by hand if you wish. If kneading by hand, I recommend using 65 ml water.
2. Divide the dough into 6 equal portions, cover them with a damp cloth, and leave to sit for 10 minutes. You can shape the dough however you like, I made mine into rolls and flower shapes this time.
3. To make the flower shape, take an oblong-shaped piece of dough and stretch it until it's around 25 cm long. Tie the dough into a knot and tuck the ends over and under. Then adjust the shape a little and you have your flower!
4. Leave the dough to prove for a second time at 40℃ for 20 minutes. Once the dough has proved, preheat the oven to 180℃.
5. When the oven has preheated, bake the dough for around 12 minutes at 180℃ and it's done.
6. This is the maple jam and shortening that I used for this recipe. You can use maple syrup instead if you'd prefer!

Story Behind this Recipe

I learnt this recipe in a bread-making class. The original recipe uses maple syrup, which as it turns out is quite expensive, so I wondered if I could substitute it with cheaper maple jam and modify the recipe a bit.
