Story Behind this Recipe
Since the bell peppers I bought were starting to wilt... While I usually stir-fry bell peppers, I wanted something refreshing, so I tried them stewed. The recipe is so simple, it's embarrassing, but also tasty. Great for summer when you have little appetite--chill in the fridge for a great taste.
A very handy recipe--once you slice the peppers, simmer them in the pot and it's done.
