Irresistible Pickled Zucchini

Pickled zucchini with a sweet and sour flavor and just a little heat! So good, you won't be able to stop!

Ingredients: 2 servings

Zucchini
1 (medium-sized)
Seasonings
Soy sauce
1 heaped tablespoon
Sugar
1 tablespoon
Vinegar
1 tablespoon
Lemon juice
1/2 teaspoon
Red chili pepper (finely chopped)

Steps

1. Peel several strips vertically down the zucchini, then slice into 7 mm slices. Coat in salt (not listed) and let sit for about 15 minutes.
2. Squeeze out any water the zucchini may release. Coat with the combined seasonings and leave overnight.
3. Done!

Story Behind this Recipe

I tried a sample of something similar at the supermarket and was amazed at how good it was! I tried to recreate it at home, and I'm pretty pleased with how this turned out!
