Mapo Cellophane Noodles for Vegetarians

The atsuage (thick fried tofu) in this dish is so juicy!

Ingredients: 1.5

Atsuage (cut into bite sized pieces)
1 pack
Cellophane noodles
30 g
Sesame oil
1 tablespoon
Chinese chives (cut into 3 cm pieces)
1/2 bunch
Ginger (minced)
1 knob
★ Miso
1/2 tablespoon
★ Soy sauce
1 tablespoon
★ Sugar
1 teaspoon
★ Doubanjiang
1/2 teaspoon
★ Rice vinegar
1 teaspoon
★ Water
3/4 cup

Steps

1. In a frying pan with heated sesame oil, add the atsuage and Chinese chives, in that order. Fry until browned.
2. Flip over the atsuage and Chinese chives. Mix the ingredients marked with a ★, then add them to the pan together with the ginger and simmer. Add the noodles without rehydrating them first!
3. Stir while simmering. It's finished when the noodles have rehydrated.
