Easy Chicken and Egg Rice Bowl with a Skillet

Easy chicken and egg rice bowl recipe with a skillet!
Packed with lots of meat and onions.

Ingredients: 4 servings

Chicken thigh meat
Mentsuyu (concentrate)
6 tablespoons
Dashi stock granules
1 tablespoon
350-400 ml
2 teaspoons
A) Sake
1 tablespoon
A) Soy sauce
1 tablespoon
A) Salt
2-3 pinches


1. Cut the chicken into bite sized pieces. Marinate with the A) seasonings (about 10 min).
2. Put the onions in a pan. Add water and cover with a lid. Steam over medium heat for about 3 min. Flavor with mentsuyu and sugar.
3. Dilute the mentsuyu to the amount of water on your preference.
4. Add chicken and simmer (flip it over sometimes to cook through) Allow the liquid to evaporate.
5. Swirl in the beaten eggs and cover with a lid until the eggs are cooked to your desired consistency.
6. Transfer to a bowl of warm rice and it's done.

Story Behind this Recipe

I created this recipe, wanting to cook it without dirtying dishes and cutting down on cooking time.
I'm not so efficient when it comes to cooking, but I can prepare this in about 30~35 minutes.
