Easy Braised Winter Melon

You just have to cut the ingredients and boil together. The only seasoning used is chicken stock granules and Shirodashi (white soy sauce soup stock). Ginger is the key to this recipe.

Ingredients: 2 Servings

Winter melon
Chicken stock granules
1.5 teaspoon
Water (to cover winter melon)
(about 200ml in a small pot)
1 piece
Shiro-dashi (white soy sauce soup stock) or Dashi-jyoyu (stock and soy sauce mixture)
1 teaspoon~
Chopped green onion
as needed


1. Peel and deseed the winter melon. Cut into quarters and slice the quarters into 1 cm cubes.
2. Put the winter melon, chicken stock granules and water in a small pot and let it come to a boil (lower to low heat upon boiling)
3. Turn off the heat when the winter melon softens, add Shirodashi (white soy sauce soup stock) or dashi soy sauce and let it come to a boil.
4. Plate and top with some chopped green onions.

I could not decide whether to make braised winter melon or winter melon soup, so I decided to make both in a same dish!
