Shiro-dashi (white soy sauce soup stock) or Dashi-jyoyu (stock and soy sauce mixture)

Peel and deseed the winter melon. Cut into quarters and slice the quarters into 1 cm cubes.
Put the winter melon, chicken stock granules and water in a small pot and let it come to a boil (lower to low heat upon boiling)
Turn off the heat when the winter melon softens, add Shirodashi (white soy sauce soup stock) or dashi soy sauce and let it come to a boil.
Plate and top with some chopped green onions.
Story Behind this Recipe
I could not decide whether to make braised winter melon or winter melon soup, so I decided to make both in a same dish!
I used a "no water pot", so I started cooking on a very low heat, and the cooking time was short. If you are using a normal pot, it will be better to cook longer on low heat. The seasoning is subtle, so adjust the seasoning to your liking.
