Simple, Crisp & Soft No-Rise 20-Minute Pizza

This is a simple pizza that doesn't require kneading or proving This pizza is crunchy and fluffy just out of the oven but will turn chewy and crisp if you reheat it in the microwave and leave it to cool.

Ingredients: one 18 cm pizza

●Strong bread flour
100 g
●Baking powder
1 1/2 teaspoons
1 teaspoon
6 pinches (using 3 fingers)
100 ml
Tomato sauce
to taste
Toppings of your choice
to taste
Pizza cheese
to taste


1. Preheat the oven to 250°C.
2. Add the ● ingredients to a bowl and mix with a whisk. Pour in the water and switch to using a spoon. Stir the mixture approximately 100 times.
3. Spoon the dough onto a sheet of parchment paper and use the spoon to spread it out into an 18 cm circle. Lay the tomato sauce and toppings over the base.
4. If you use a wet spoon, the dough is less likely to stick and will be easier to spread out.
5. Transfer the baking paper and pizza base onto a baking tray and bake for 10-13 minutes in the preheated oven.
6. For those that want a chewier base, after cooking, place the pizza in a microwave and heat for 1 minute at 500 W. Leave to cool and the dough will become more elastic.

Story Behind this Recipe

I modified Recipe ID: 1858570 to make a larger amount of dough. The texture is a little different too. I often cut this pizza up and give it to my 3-year-old as a snack. We like a chewy texture so I often heat it in the microwave after cooking.
