Refreshing Grapefruit and Daikon Radish Salad

Grapefruit is so juicy and refreshing. They're delicious when well-chilled.

Ingredients: 2-3 servings

Daikon radish
5 cm
Grapefruit (pink)
1
Zucchini
1/2
Olive oil
1 tablespoon
◎Wine vinegar or lemon juice
1 tablespoon
◎Honey or sugar
1 tablespoon
◎Salt and pepper
a small amount

Steps

1. Cut the daikon radish into 2-3 mm thick wedges, thinly slice the zucchini, sprinkle with salt and let sit for 10 minutes. Squeeze out the excess water.
2. Remove the flesh of the grapefruit from the peel and cut into large pieces. Peel it into a bowl to prevent wasting any remaining juice.
3. To prepare the dressing, combine the ◎ ingredients together and mix until even Add the olive oil and mix well.
4. Toss the daikon radish and zucchini with the dressing. Add the grapefruit, mix, and enjoy. It's delicious when chilled.
