No Egg, Milk, or Flour! Rice Flour Banana Cake

This is safe for children with allergies. Has no one thought of making this with no eggs, milk or flour before!? This is a healthy cake that is springy when fresh.

Ingredients: 1 pound cake

Rice flour
150 g
2 bananas
Sugar (or raw cane sugar)
40~50 g
Olive oil
40 g
Soy milk
150 ml
Baking powder
7 g


1. Put 1.5 of the bananas in a bowl and mash. The leftover half of a banana will be used for decoration, so cut it into slices.
2. Preheat your oven to 180℃.
3. Add the sugar to the mashed bananas and mix well.
4. Add in the baking powder and mix well. Then add in the olive oil and mix once more.
5. Next, add in the rice flour and soy milk and mix well.
6. Pour the dough into a parchment lined pan and top with the thinly sliced bananas. Bake at 180℃ for 45 minutes.
7. When you pierce it with a bamboo skewer and it comes out clean, it's done. If you want it lighter, cover it with aluminum foil and bake for 5-10 minutes.
