Chilled Pasta with Shrimp and Avocado

A chilled pasta with shrimp and creamy avocado sauce.

Ingredients: 2 servings

Cappellini (or spaghetti)
2 servings
Seasoning ingredients
1 tablespoon
Mentsuyu (3x concentrate)
1 tablespoon
Vinegar (or lemon juice)
2 teaspoons
2 teaspoons (optional)
1 teaspoon
Soy milk (or milk)
about 50 ml


1. Boil water in a frying pan. Add a pinch of salt, and boil the pasta.
2. Mash the avocado with your hands or with a spoon. (The avocado paste in the picture is for one serving.)
3. Combine the avocado paste from Step 2 with all other ingredients except for the soy milk.
4. Mix until well-combined.
5. Mix the soy milk into the mixture with a spoon or cooking chopsticks.
6. One minute before the pasta is done, add the deveined shrimps. Once boiled, drain in a sieve and soak in cold water. Drain.
7. Toss the drained pasta and shrimp with the creamy sauce from Step 5.
8. Sprinkle some black pepper to taste, and it's done. Top with slices of avocado (not listed) and serve.

Story Behind this Recipe

I made this chilled pasta because I had an extra avocado on hand. I used Cappellini, which cooks quickly.
