Tofu and Avocado Salad

You see this salad everywhere, but I love it. If you plate it nicely like in the picture, you can serve it at parties too. It's so easy that I probably don't even need write up the steps...

Ingredients: 2-4 servings

Firm tofu
about 1/2 block
Avocado
1
Lemon juice
a small amount
Soy sauce
as needed
Wasabi
a small amount

Steps

1. Halve the avocado and cut into 1 cm slices. Cut the tofu into 1 cm slices. Tofu should be about same width and height with the avocado.
2. Drain the water out from the tofu. Wrap the tofu with paper towels and microwave for 1 minute on high. Sprinkle lemon juice over the avocado to avoid discoloration.
3. Layer alternating slices of tofu and avocado. Serve the wasabi soy sauce on the side. Done! I arranged the sprouts around the tofu and avocado in this picture.
4. Here's a little bonus tips: if you have leftover avocado, please try this. Put the avocado on top of warm rice. Smash the avocado and drizzle on a bit of soy sauce. Wrap them with nori and eat it! It's so good! It's just like eating an egg!
