Baked Cheesecake

No measurement necessary. Even my young daughter can easily make this cheesecake! Just combine, mix, and bake!

Ingredients: About 9 cupcakes - around 200 kcal per cake

Eggs (large)
Sugar (caster sugar)
4 tablespoons
Flour (cake flour)
3 tablespoons
Lemon juice
2 tablespoons
Heavy cream
200 ml
Cream cheese
200 g


1. Put all the ingredients in the blender. Mix to a smooth consistency.
2. Pour the mixture into cups. Fill them up 70-80%.
3. Bake in an oven preheated to 170℃ (or 338 F) for 30 minutes. Insert a skewer in a cake and if it comes out clear, it is ready. If you would like them to be a little more golden, bake them for another 5 minutes.
4. Cool them on a wire rack, then put them in the fridge to chill. You can also enjoy them half frozen.
5. If you use an 18 cm round pan, the height will be around 2 cm. This picture shows cheese cake served with my favourite blueberry jam.

Story Behind this Recipe

If I baked this in a cake pan, my daughter would eat it all. So I decided to make cupcakes.

I wanted her to start baking by herself, so I uploaded the recipe here to encourage her to bake on her own.
