Lotus Root Salad: Goes Surprisingly Well With Rice!

I serve this lotus root salad whenever there are guests. Since it's stir fried it goes really well with rice.

Ingredients: 5 servings

Lotus root
about 1 (250 g)
Coarsely ground Wiener sausages
1 1/2
1 1/2 tablespoons
Salt and pepper
to taste
about 5 tablespoons (to taste)
Soy sauce
1/2 teaspoon
Sesame oil
about 1 tablespoon

1. Peel the lotus root, cut in half lenghwise and slice thinly. Put the slices into a bowl of water. Slice the cucumber thinly and sprinkle with a little salt. Slice the sausages thinly.
2. Heat the sesame oil in a frying pan. Add the sausages and stir fry. Drain the lotus root and add to the frying pan, and when it's evenly coated with oil, add the sake. Season with salt and pepper and drizzle in the soy sauce. Take out of the pan into a bowl to cool.
3. When it has cooled down a bit, add the cucumber and mayonnaise, and mix well. Done! The lotus root is so crispy and good.
