Summery Bitter Melon Pickles

This is great as a summer appetizer.


Bitter melon
1~2 (about 250 g)
100 ml
3 tablespoons
1 teaspoon
Red chili pepper


1. [Prepare the bitter melon] Cut the bitter melon in half vertically and use a spoon to scoop out the seeds.
2. Cut into 5 mm slices. Sprinkle with salt (not listed) and let sit (about 30 minutes).
3. Once wilted, set on a strainer and pour hot water on top (be careful of splatters).
4. Place in a storage container, add the seasonings, and let the hot goya marinade.
5. Enjoy it after half a day.
6. I recommend chilling it in the refrigerator. The picture shows the pickles with 1/4 of a marinated sliced onion.
