Cream Cheese Cupcakes

These cakes are fluffy right after baking, and moist at a room temperature. If you chill them in the fridge, they'll take on a rich cheese cake texture.

Ingredients: 6 cakes

Cream cheese
100 g
10 g
Pancake mix
30 g
3 tablespoons
1 tablespoon
Lemon juice
1/2 teaspoon


1. Put the cream cheese and butter in a heatproof container. Microwave at 600 W for about 40 seconds to soften.
2. Mix with a whisk until it reaches a cream-like consistency. Preheat the oven to 180°C.
3. Add rest of the ingredients to the cream cheese mixture and mix well.
4. Lightly grease the cupcake pan with vegetable oil (not listed). Pour in the batter.
5. Bake in preheated oven for about 18 minutes.
