Chicken Karaage Sushi Roll

"Give me a chicken karaage (fried chicken) sushi roll please ma'am!"
This was the most popular item on the menu at my university cafeteria! Sushi rice and karrage!? This combination is the best!

Ingredients: 2-3 people

Hot cooked rice
2 bowls
Toasted nori seaweed
3 slices
Flavoring ingredients:
Vinegar
2 tablespoons
Sugar
1 tablespoon
Salt
1/2 teaspoon
Additions:
Fried chicken
6 pieces
Lettuce
3 leaves

Steps

1. Microwave the seasoning ingredients for about 20 seconds to dissolve (adjust the time according to your microwave). (See Tip 1 in Hints.)
2. Add the flavoring ingredients to the piping hot rice with a rice paddle, and mix while cooling.
3. Put down a sushi rolling mat, then put on plastic wrap, nori seaweed and 1/3 of the sushi rice in that order. Tip 2: Don't put on too much sushi rice at this point!
4. Lay the lettuce and the fried chicken on top in the center. Tip 3: Cut the fried chicken into similar-sized pieces.
5. Roll up tightly.
6. Cut the rolls, and you are done. Wet the knife after each cut (see Tip 4 in Hints).
7. Cut into bite-sized pieces, and pack in your bento!
8. Add spicy mayonnaise for a grownup flavor!

Story Behind this Recipe

I wanted to reproduce a nostalgic item that used to be served at the school cafeteria when I was in university, so I made this.
At the time, to keep up with huge demand, the dinner ladies at the cafeteria would pick up the fried chicken and make these rolls with their bare hands. Amazing!
