Deep Fried Chicken - Authentic Recipe from a Chinese Restaurant

Easily recreate authentic deep fried chicken kara-age at home.
This recipe makes a substantially tasty kara-age, even without marinating the chicken overnight.

Ingredients: 2 servings

Chicken thigh meat
350 g
Cooking sake
25 ml
Soy sauce
20 ml
Umami seasoning
2 teaspoons
Light brown sugar (or granulated sugar)
1 tablespoon
Raw ginger juice (grated with skin)
13 g
Oyster sauce
5 ml
Katakuriko
as needed

Steps

1. Combine all the seasoning ingredients except for the katakuriko with the chicken. Rub the seasoning into the meat.
2. Mix in the katakuriko and while waiting for the ingredients to blend, chop the cabbage and other garnishing vegetables.
3. Deep fry for about 5 minutes in oil heated to 170°C, then remove and let sit for 2 minutes.
4. Briefly deep fry once more in oil heated to 200°C, then serve.
