Purple Sweet Potato Baked Cheesecake

If you use purple sweet potato, you'll have a cute and tasty cheesecake.

Ingredients: 1 18 cm cake mould

Purple sweet potato
200 g
Cream cheese
200 g
Heavy cream
200 ml
Granulated sugar
70 g
Cake flour
2 tablespoons
Lemon juice
2 teaspoons
Plain biscuits
4 packs (70 g)
40 g
Powdered sugar to finish
As you like


1. Steam the sweet potato and lightly mash with a fork.
2. Crush the biscuits in a food processor, and mix with butter melted in the microwave. Spread and pack in the bottom of the cake mould and chill in the fridge.
3. Put the cooled sweet potato, heavy cream, eggs and granulated sugar in the food processor and blend it all together.
4. Add the cream cheese softened in the microwave, the flour and lemon juice and give it a mix.
5. Pour into the mould and bake for 45 minutes at 170℃.

Story Behind this Recipe

I used purple sweet potato in my usual sweet potato and pumpkin cheesecake recipe because I was taking it to a party. Everyone loved it.
