This is one of those recipes, which you can combine shio-konbu with anything you like. I think this dish goes well with carbonated drinks such as beer, chuhai (cocktail of shochu with tonic water), and highballs.
I prepare this dish whenever I crave cooked tomato dishes.
Please be careful not to stir-fry the tomato and eggs for too long.It looks more delicious when you roughly scramble the eggs.
