Peel the onions. Remove the stem and hard ends, then chop in half. Spread aluminum foil on a baking tray and align the onions.
Use a spoon to spread olive oil thinly. Sprinkle some herb salt and pepper.
Top with grated cheese. Bake in the oven until the onions are soft and browned. If it's too browned, cover with aluminum foil while it's baking.
Here, I topped cherry tomatoes on sautéed zoocchini to accompany the onions, and arranged them on a large serving plate.
I scattered some parsley and served with basil sauce (store-bought is fine).
