Sugar-Free Banana Cake Made with Shio-Koji and Amazake

This cake has a sugar-free sweetness that's gentle for the body Whether fresh out of the oven or cooled, it's a moist and tasty cake The shio-koji brings out the natural sweetness of the ingredients.

Ingredients: 18 cm diameter cake

80 g
2 teaspoons
Vegetable oil
1 tablespoon
Additive-free soy milk
100 ml
White flour
150 g
Baking powder (aluminum-free)
1 tablespoon


1. Mash the bananas in a bowl. Leave some lumps if you prefer the texture.
2. Mix in the amazake, shio-koji, and other ingredients in the order listed. If possible, sift in the dry ingredients.
3. Mix gently without over mixing, pour into a parchment paper lined mold and shake from side to side to even out the batter.
4. Bake for 25-30 minutes at 180℃.
