Sweet Pastry For Tart Crust (Pâte Sucrée)

Ingredients: For about 8 small tarts

Unsalted butter (room temperature)
100 g
60 g
Whole egg (room temperature)
30 g
A. Cake flour (sifted)
170 g
A. Almond powder
25 g


1. Bring the butter to room temperature, combine with the sugar, then mix well until pale.
2. Stir in the egg, a little at a time.
3. Fold in the "A" ingredients with a spatula using a cutting motion.
4. It's ready when the flour is no longer visible.
5. Wrap in plastic wrap and chill overnight in the refrigerator.
