Cut the green onions into small pieces. Soak the tempura crumbs in a bit of mentsuyu. If using a concentrated type, dilute it with water.
Mix together the fresh rice, tempura crumbs, bonito flakes, and sesame salt in a bowl.
Mix in the green onions and season to taste with the sesame salt and mentsuyu.
Mix in the wasabi and powdered cheese.
Roll into your desired shapes. I made round onigiri.
Arrange on a plate to finish. I garnished them with matcha.
Story Behind this Recipe
I made wasabi-flavored onigiri seasoned with tempura crumbs, green onions, sesame salt, and mentsuyu.
Adjust the ratio of sesame salt and mentsuyu to taste. If the rice is too dry, add a bit of hot water in Step 3. This time, I sprinkled some matcha on top. You could also top them with a pinch of ao-nori.
